Egg Custards

A mild vanilla cup custard. Great for a quick breakfast or snack.
Serves: 6
Ingredients:
- 2 cups of milk
- 3 eggs
- 4 Tablespoons of sugar
- ⅛ teaspoon of salt
Instructions:
- Preheat oven to 350F
- Scald milk (180F+)
- Slightly beat eggs in a separate container
- Mix sugar, vanilla, and salt into eggs
- Slowly, pour egg mixture into the milk, whisking the whole time
- Pour milk mixture evenly into 6 custard cups
- Put the custard cups into a pan with 1/2 to 1 in. of hot water in the bottom
- Bake in oven for 30 mins
- Lower temp. to 325F for 10-15 mins.
- Test for doneness with knife (should come out clean when inserted into center)
Comments:
If desired, nutmeg can be sprinkled on top, prior to cooking
