Crispy Baked Fish and Chips

Cod fillets surrounded in hash browns; what could be better?

Serves: 4

Cook Time: 30 minutes

Ingredients:

  • 4 cod fillets (~1.5 lb. total)
  • 2 Tbsp of mayonnaise
  • 2 tsp of Dijon mustard
  • 1½ cups of frozen shredded hash browns
  • ¾ cup of white cheddar cheese, shredded
  • ½ cup of plain panko crumbs
  • 2 Tbsp of butter, melted

Instructions:

  1. Preheat oven to 400°F
  2. Spray a casserole dish with cooking spray. Add fish.
  3. In a small bowl, mix the mayonnaise and mustard. Coat the top side of the fish evenly with the mixture using a spoon.
  4. Prepare the crust: In a different bowl, thoroughly mix crust ingredient. Press crust mixture onto the cod in a 1/2-inch-thick layer, covering the top side completely.
  5. Bake for 20 to 25 minutes, or until fish is cooked through, flaky and firm with an internal temperature of 145°F.

Comments:

For a crispier crust, broil on low for an additional 1 to 3 minutes.
