Crispy Baked Fish and Chips

Cod fillets surrounded in hash browns; what could be better?
Serves: 4
Cook Time: 30 minutes
Ingredients:
- 4 cod fillets (~1.5 lb. total)
- 2 Tbsp of mayonnaise
- 2 tsp of Dijon mustard
- 1½ cups of frozen shredded hash browns
- ¾ cup of white cheddar cheese, shredded
- ½ cup of plain panko crumbs
- 2 Tbsp of butter, melted
Instructions:
- Preheat oven to 400°F
- Spray a casserole dish with cooking spray. Add fish.
- In a small bowl, mix the mayonnaise and mustard. Coat the top side of the fish evenly with the mixture using a spoon.
- Prepare the crust: In a different bowl, thoroughly mix crust ingredient. Press crust mixture onto the cod in a 1/2-inch-thick layer, covering the top side completely.
- Bake for 20 to 25 minutes, or until fish is cooked through, flaky and firm with an internal temperature of 145°F.
Comments:
For a crispier crust, broil on low for an additional 1 to 3 minutes.
