Aline's Sponge Sandwich

A light sponge cake with a jam filling
Cook Time: 20 minutes
Ingredients:
- 3 Large Eggs
- 3 oz. of Caster Sugar
- 3 oz. of Self-Raising Flour (Seived)
- Jam (usually raspberry)
Instructions:
- Preheat oven to 175°C (437°F)
- Brush two 7-inch cake tins with butter (sides and bottom)
- Whisk eggs & sugar together until creamy
- Gently fold in flour
- Bake for 20 mins.
- When cool, remove cakes from tins
- Spread jam across the top of one of the cakes
- Carefully life the second cake an place it on top of the first
