Aline's Sponge Sandwich

A light sponge cake with a jam filling

Cook Time: 20 minutes

Ingredients:

  • 3 Large Eggs
  • 3 oz. of Caster Sugar
  • 3 oz. of Self-Raising Flour (Seived)
  • Jam (usually raspberry)

Instructions:

  1. Preheat oven to 175°C (437°F)
  2. Brush two 7-inch cake tins with butter (sides and bottom)
  3. Whisk eggs & sugar together until creamy
  4. Gently fold in flour
  5. Bake for 20 mins.
  6. When cool, remove cakes from tins
  7. Spread jam across the top of one of the cakes
  8. Carefully life the second cake an place it on top of the first
