Caramelized Onion Mashed Potatoes

Total Time: 50 minutes
Ingredients:
- 2 Tbsp of olive oil
- 4 yellow or red onion, thinly sliced
- 2 lb of gold or russet(peeled) potatoes, cubed
- 4 Tbsp of salted butter
- 1 tsp of kosher salt
- 1 cup of half-and-half
- 1 cup of Parmesan, grated
- 1 bunch of chives, chopped
- 2 sprigs of thyme, chopped
- 3 leaves of sage, chopped
Instructions:
- In a large skillet over medium heat, heat the olive oil
- Add onions and sauté until fully browned and caramelized, about 25 to 35 minutes
- Shut off heat, cover and keep warm
- Boil a large pot of water. Add and cook potatoes until fork tender, about 20 minutes and drain
- Transfer potatoes back to the pot and stir in butter, salt, and half-and-half
- Mash until smooth
- Add half the onions to potatoes, along with the Parmesan: stir
- Top finished potatoes with remaining caramelized onions, chives, thyme and sage
