Caramelized Onion Mashed Potatoes

Total Time: 50 minutes

Ingredients:

  • 2 Tbsp of olive oil
  • 4 yellow or red onion, thinly sliced
  • 2 lb of gold or russet(peeled) potatoes, cubed
  • 4 Tbsp of salted butter
  • 1 tsp of kosher salt
  • 1 cup of half-and-half
  • 1 cup of Parmesan, grated
  • 1 bunch of chives, chopped
  • 2 sprigs of thyme, chopped
  • 3 leaves of sage, chopped

Instructions:

  1. In a large skillet over medium heat, heat the olive oil
  2. Add onions and sauté until fully browned and caramelized, about 25 to 35 minutes
  3. Shut off heat, cover and keep warm
  4. Boil a large pot of water. Add and cook potatoes until fork tender, about 20 minutes and drain
  5. Transfer potatoes back to the pot and stir in butter, salt, and half-and-half
  6. Mash until smooth
  7. Add half the onions to potatoes, along with the Parmesan: stir
  8. Top finished potatoes with remaining caramelized onions, chives, thyme and sage
