Overnight French Toast Casserole

Serves: 8

Prep Time: 30 minutes

Cook Time: 60 minutes

Total Time: 90 minutes

Ingredients:

  • 1 Loaf of challah bread
  • 8 eggs (lightly beaten)
  • 3 cups of 2% milk
  • 4 tsp. of sugar (I use dark brown)
  • 1 tsp. of vanilla extract
  • ¾ tsp. of kosher salt
  • 1 cup of raisins (optional)
  • 2 tbsp. of salted stick butter (for topping)
  • 3 tbsp. of sugar (for topping)
  • 2 tsp. of ground cinnamon (for topping)

Instructions:

  1. Cut bread into cubes of your preferred size & place in a greased 13x9 baking dish. (Mix the raisins throughout the bread cubes, make sure none are on top or they will burn)
  2. In a large mixing bowel, combine the eggs, milk, sugar, vanilla, and salt.
  3. Pour wet ingredients over the bread and cover, refrigerated, for at least 8 hours (or overnight).
  4. Remove from refrigerator 30 minutes before baking!
  5. Preheat oven to 350°F.
  6. Dot the casserole with topping butter for more flavour. In a small dish, combine topping sugar and cinnamon; sprinkle across the top.
  7. Cover the casserole with aluminium foil and bake for 45-50 minutes (when a knife comes out clean).
  8. Let stand for 5 minutes before enjoying.
