French Toast Casserole

Overnight French Toast Casserole
Serves: 8
Prep Time: 30 minutes
Cook Time: 60 minutes
Total Time: 90 minutes
Ingredients:
- 1 Loaf of challah bread
- 8 eggs (lightly beaten)
- 3 cups of 2% milk
- 4 tsp. of sugar (I use dark brown)
- 1 tsp. of vanilla extract
- ¾ tsp. of kosher salt
- 1 cup of raisins (optional)
- 2 tbsp. of salted stick butter (for topping)
- 3 tbsp. of sugar (for topping)
- 2 tsp. of ground cinnamon (for topping)
Instructions:
- Cut bread into cubes of your preferred size & place in a greased 13x9 baking dish. (Mix the raisins throughout the bread cubes, make sure none are on top or they will burn)
- In a large mixing bowel, combine the eggs, milk, sugar, vanilla, and salt.
- Pour wet ingredients over the bread and cover, refrigerated, for at least 8 hours (or overnight).
- Remove from refrigerator 30 minutes before baking!
- Preheat oven to 350°F.
- Dot the casserole with topping butter for more flavour. In a small dish, combine topping sugar and cinnamon; sprinkle across the top.
- Cover the casserole with aluminium foil and bake for 45-50 minutes (when a knife comes out clean).
- Let stand for 5 minutes before enjoying.
