Thanksgiving Potato Chowder

Farm to Table Soup

Serves: 12

Ingredients:

  • ½ cup of bacon
  • 1 cup of yellow onion, chopped
  • 1 cup of celery, diced
  • ¼ cup of garlic, minced
  • 1½ cup of yellow potatoes, diced into 1-inch cubes
  • ½ cup of flour
  • 3 quarts of chicken stock
  • 1 pound of turkey meat, diced
  • 2 cup of frozen corn
  • 2 Tbsp of rubbed sage
  • 1½ tsp of dried thyme
  • 1 quart of half-and-half
  • 1 Tbsp of salt
  • ¼ cup of parsley, chopped

Instructions:

  1. In a large pot over medium-high heat, cook and stir the bacon until it is rendered and starts to brown
  2. Add the onions, celery and garlic; sauté util onions are translucent
  3. Add the potatoes; stir
  4. Add the flour; stir
  5. Slowly add in all the chicken stock.
  6. Continue stirring, allowing the soup to come to a boil, then reduce to a simmer
  7. Stir in the turkey, corn, sage, thyme, half-and-half and salt
  8. Simmer until soup is thick and creamy, and the potatoes are tender
  9. Add the parsley when serving
