Thanksgiving Potato Chowder

Farm to Table Soup
Serves: 12
Ingredients:
- ½ cup of bacon
- 1 cup of yellow onion, chopped
- 1 cup of celery, diced
- ¼ cup of garlic, minced
- 1½ cup of yellow potatoes, diced into 1-inch cubes
- ½ cup of flour
- 3 quarts of chicken stock
- 1 pound of turkey meat, diced
- 2 cup of frozen corn
- 2 Tbsp of rubbed sage
- 1½ tsp of dried thyme
- 1 quart of half-and-half
- 1 Tbsp of salt
- ¼ cup of parsley, chopped
Instructions:
- In a large pot over medium-high heat, cook and stir the bacon until it is rendered and starts to brown
- Add the onions, celery and garlic; sauté util onions are translucent
- Add the potatoes; stir
- Add the flour; stir
- Slowly add in all the chicken stock.
- Continue stirring, allowing the soup to come to a boil, then reduce to a simmer
- Stir in the turkey, corn, sage, thyme, half-and-half and salt
- Simmer until soup is thick and creamy, and the potatoes are tender
- Add the parsley when serving
