Aline's Cherry Cheesecake

Ingredients:
- Base Ingredients:
- 6 oz. of Crumbled Mcvites Digestive Biscuits
- 3 oz. of Melted Butter
- 1 Heaped Dessert Spoon of Castor Sugar
- Filling Ingredients:
- 1 Package of Dream Topping
- ½ cup of Cold Water
- ½ tsp. of Vanilla Essence (Vanilla Extract)
- ½ cup of Icing Sugar
- 2 Tbsp. of Fresh Lemon Juice
- 4 oz. of Philadelphia Cream Cheese (but actually use 6oz)
- 1 Tin of Black Cherries
- 1 Heaped Tbsp. of Arrowroot (or cornflour) mixed with the cherry juice
Instructions:
- Preheat the oven to 150°C (300°F).
- Mix the base ingredients together; press into a ring cake tin.
- Bake for 7 mins (may not need the whole time, just until its lightly browned).
- Start beating dream topping and cold water together; add the sugar while beating. Finish beating when stiff (use hand mixer).
- Add vanilla, lemon juice, & cream cheese; beat until thick and smooth.
- When base is cool, spread filling over the base.
- Then in a cup, blend the arrowroot(or cornflour) with a small portion of the cherry juice (enough that you get a smooth, but not thin mixture). Put the rest of the juice in a pot on the stove. Very carefully start bringing the juice to a boil; before it reaches a boil, add the thickened arrowroot/juice mixture to the pot. If it doesn't thicken enough, add a tad bit more arrowroot (mixed with small amount of water) to the pot.
- Once at a boil, take the juice off the stove and cool down. When it is cool, spread over the filling carefully (try not to mix with the filling).
- Place cherries over top.
- Refrigerate for a few hours before eating.
